It's not soup, but it's cooking with my mom. Every so often I invite my mom over to teach me how to make one of her recipes. This is nothing fancy, but I love my mom's breaded pork chops. I probably could have made this on my own, but I get really worried about cooking pork. I have my meat thermometer, but I still get all wigged out.
Okay, so here's the loosey-goosey recipe.
4 pork chops ( I buy chops w/o bones)
1-2 cups bread crumbs
2 eggs
Canola Oil
Take your pork chops and 1 by 1:
First, dip in bread crumbs.
Second, dip in egg.
Third, dip in bread crumbs again.
Place chops in the preheated oil in the frying pan (oil coats bottom of pan and comes up a quarter of the way up the chop). Fry chops for 4 minutes and then turn over. (Check to make sure the breading is a nice golden brown before you flip) Fry chops for another 4 minutes.
Remove chops from pan and place into a baking dish and cover with foil.
Bake pork chops for 15 minutes in preheated 350 degree oven.
Enjoy!
My mom likes to bake them instead of completely fry them because then she knows the middle gets cooked properly and you don't have to worry about the breading burning.
Anyhow, I got really upset when she was over. I was going through my freezer seeing what she could teach me to cook next. I came across some meat and it had freezer burn on it. My mom told me to throw it away and asked why I didn't cook it. Well, I had to bring up X and that I bought it for him. I talked about him in the PAST. So anyway, she went along and started talking about the current, the now, regarding him. Wait, wait, wait... There is no 'now' concerning him. X has to be DEAD to me for my mental sanity. He no longer exists. The whole thing made me really emotional and I ended up laying down the law on my mom about everything that was bothering me... It was a huge relief and release off my shoulders. The whole "episode" wasn't fun, but it'll be beneficial in the end......
